Ingredients

  • 1.5 pounds medium carrots, peeled and cut into 2 by 1/2-inch pieces
  • 3 tablespoons olive oil
  • 1 tablespoon honey
  • 3/4 teaspoon table salt
  • 1/2 teaspoon ground black pepper

Instructions

  • Preheat oven to 475°F.
  • Preheat a rimmed baking sheet in the oven for 10 minutes.
  • Toss carrots with olive oil, honey, salt, and pepper.
  • Spread carrots in a single layer on the preheated baking sheet.
  • Roast for 15 minutes until bottoms brown.
  • Toss carrots and roast for another 3 minutes until tender and deep amber.
  • Serve immediately.
