Ingredients

  • ½ cup finely chopped onion
  • 1 carrot, peeled and shredded
  • 1 cup white vinegar
  • 6 tablespoons sugar
  • 2 tablespoons olive oil
  • Salt and pepper, to taste

Instructions

  • Shred carrot.
  • Combine coleslaw mix, onion, and shredded carrot in a large bowl.
  • In a saucepan, combine vinegar, sugar, olive oil, 1 teaspoon salt, and ½ teaspoon pepper over medium heat.
  • Stir until sugar dissolves and bring to a simmer.
  • Pour hot vinegar mixture over coleslaw mix and toss.
  • Refrigerate for 2 hours until chilled and wilted.
  • Season with additional salt and pepper to taste, and serve using a slotted spoon.
