Ingredients

  • 1 10 oz bag Tostitos Scoops tortilla chips
  • 1 8 oz block cream cheese, softened
  • 8 oz shredded mozzarella cheese
  • 1 large egg
  • 1 can sweet corn, rinsed and drained
  • 1 can green chiles, diced, mild or medium
  • 1 tsp garlic powder
  • 1 tsp kosher salt
  • 1/2 tsp freshly ground black pepper
  • 1/2 cup grated Parmesan cheese, for topping

Instructions

  • Preheat oven to 425°F. Grease or line two baking sheets with parchment paper. Arrange tortilla chips cup side up.
  • In a large bowl, mix cream cheese, mozzarella, egg, corn, green chiles, garlic powder, salt, and pepper until creamy.
  • Fill each chip with 1 tablespoon of filling. Sprinkle Parmesan cheese on top.
  • Bake for 13-15 minutes until tops are golden and cheese is bubbling.
  • Serve warm from the baking sheet. Enjoy while cheese is melty.
