Iowa Party Bites

Ingredients

  • 1 (10 oz) bag Tostitos Scoops tortilla chips
  • 1 (8 oz) block cream cheese, softened
  • 8 oz shredded mozzarella cheese
  • 1 large egg
  • 1 can sweet corn, rinsed and drained
  • 1 can green chiles, diced, mild or medium
  • 1 tsp garlic powder
  • 1 tsp kosher salt
  • 1/2 tsp freshly ground black pepper
  • 1/2 cup grated Parmesan cheese, for topping

Preheat the Oven and Prepare Baking Sheets

Preheat your oven to 425°F. Lightly grease two large baking sheets or line them with parchment paper. Arrange the tortilla chips closely on the sheets, cup side up, so they are ready to be filled.

Make the Filling

In a large mixing bowl, whisk together the softened cream cheese, shredded mozzarella, egg, corn, green chiles, garlic powder, salt, and black pepper. Ensure the mixture is fully combined and creamy.

Fill the Chips

With a small spoon, fill each tortilla chip with approximately 1 tablespoon of the prepared filling. Be generous but avoid overfilling. Once all chips are filled, sprinkle the grated Parmesan cheese evenly over the tops.

Bake Until Golden

Bake the stuffed chips in the preheated oven for 13 to 15 minutes, or until the tops are lightly browned and the cheese is bubbling.

Serve and Enjoy

Serve the stuffed chips warm, directly from the baking sheet, and enjoy them while the cheese is still hot and melty.
