Ingredients

  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • 1 tablespoon Dijon mustard
  • 3 tablespoons honey
  • 1/4 cup avocado oil
  • 2 pounds baby potatoes

Instructions

  • Preheat oven to 425°F. Lightly grease a baking sheet.
  • Cut baby potatoes into bite-sized pieces and place in a large bowl.
  • In a small bowl, mix onion powder, garlic powder, Dijon mustard, and honey. Slowly whisk in avocado oil.
  • Pour honey-mustard dressing over potatoes and toss to coat. Arrange potatoes in a single layer on baking sheet. Season with salt and pepper.
  • Roast potatoes for 20-25 minutes, stirring halfway, until crispy and golden brown.
  • Cool slightly before serving. Garnish with chopped thyme and enjoy.
