Honey Mustard Roasted Potatoes

Ingredients

  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • 1 tablespoon Dijon mustard
  • 3 tablespoons honey
  • 1/4 cup avocado oil
  • 2 pounds baby potatoes

Get Prepped

Preheat your oven to 425°F. Lightly grease a baking sheet.

Dice the Potatoes

Cut the baby potatoes into bite-sized pieces and place them in a large mixing bowl.

Make the Honey Mustard

In a small bowl, combine the onion powder, garlic powder, Dijon mustard, and honey. Slowly whisk in the avocado oil until the mixture is well blended.

Toss and Season

Pour the honey-mustard dressing over the diced potatoes and toss thoroughly to coat. Arrange the potatoes in a single layer on the greased baking sheet. Season with salt and pepper.

Roast to Golden Brown
