Ingredients

  • 3 pounds small Yukon Gold or red potatoes
  • 1 teaspoon Italian seasoning
  • 1 teaspoon dried thyme
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 3 tablespoons freshly grated Parmesan cheese, plus more for serving
  • 4 tablespoons butter, melted
  • 2 tablespoons vegetable oil
  • 4 garlic cloves, minced
  • 1 tablespoon chopped fresh parsley

Instructions

  • Cut large potatoes in half, keep small ones whole, and place in a greased 6-quart slow cooker.
  • Sprinkle with Italian seasoning, thyme, salt, pepper, and Parmesan cheese.
  • Mix melted butter, vegetable oil, and garlic; pour over potatoes.
  • Cook on HIGH for 3 hours or LOW for 5-6 hours until fork-tender.
  • Garnish with parsley and more Parmesan before serving. Serve warm.
