Ingredients

  • 1/2 cup semi-sweet chocolate chips or chopped chocolate, melted
  • 1 cup cottage cheese
  • 1 teaspoon vanilla extract
  • 1 egg
  • 4 tablespoons melted butter or avocado oil
  • 3/4 cup milk
  • 1/2 cup sugar-free sweetener, like monkfruit
  • 1/2 cup cocoa powder
  • 3/4 cup whole wheat flour
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup mini chocolate chips

Instructions

  • Preheat your oven to 350°F. Lightly grease or line a 9×9-inch baking dish.
  • In a food processor, blend cottage cheese, melted chocolate, melted butter, vanilla, egg, milk, sweetener, and cocoa powder until smooth.
  • In a large bowl, whisk together whole wheat flour, baking soda, and salt.
  • Pour wet mixture into dry ingredients. Stir until just combined. Fold in mini chocolate chips.
  • Spread batter in prepared dish. Bake for 20-25 mins. Check doneness with a toothpick.
  • Cool completely in the pan. Cut into 16 squares. Serve and enjoy.
