Cottage Cheese Brownies

Ingredients

  • 1/2 cup semi-sweet chocolate chips or chopped chocolate, melted
  • 1 cup cottage cheese
  • 1 teaspoon vanilla extract
  • 1 egg
  • 4 tablespoons melted butter or avocado oil
  • 3/4 cup milk
  • 1/2 cup sugar-free sweetener (like monkfruit)
  • 1/2 cup cocoa powder
  • 3/4 cup whole wheat flour
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup mini chocolate chips

Preheat the oven

Preheat your oven to 350°F. Lightly grease a 9×9-inch baking dish or line it with parchment paper.

Blend the wet ingredients

In a food processor, combine the cottage cheese, melted chocolate, melted butter, vanilla extract, egg, milk, sugar, and cocoa powder. Blend everything on high until the mixture is smooth and well combined.

Mix the dry ingredients

In a large bowl, whisk together the whole wheat flour, baking soda, and salt.

Combine and fold

Pour the wet mixture from the food processor into the dry ingredients. Stir until everything is just combined. Gently fold in the mini chocolate chips.

Transfer and bake

Evenly spread the batter into your prepped baking dish. Bake for 20 to 25 minutes. Check for doneness by inserting a toothpick into the center; it should come out clean.

Cool and slice

Allow the brownies to cool completely in the pan before cutting them into 16 squares. Serve and enjoy!
