Ingredients

  • 2 teaspoons extra-virgin olive oil
  • 1 medium yellow onion, finely chopped
  • 12 ounces fresh spinach, chopped
  • 10 ounces grated mozzarella cheese
  • 8 large egg whites, or 1 1/2 cups liquid egg whites
  • 1 whole egg
  • 1/2 cup low-fat cottage cheese
  • 1/4 teaspoon ground cayenne pepper
  • 1/8 teaspoon sea salt
  • 1/8 teaspoon ground nutmeg
  • 1/4 teaspoon freshly ground black pepper

Instructions

  • Preheat the oven to 375°F. Coat a 9-inch pie pan with cooking spray.
  • Heat olive oil in a skillet over medium-high heat. Cook onion until softened. Add spinach and cook until wilted and dry. Set aside.
  • Whisk egg, egg whites, cottage cheese, cayenne pepper, sea salt, nutmeg, and black pepper in a large bowl.
  • Spread grated cheese in prepared pie pan. Layer with spinach and onions. Pour egg mixture over veggies and cheese.
  • Bake for 40-45 mins until eggs are set. Rest for 5 mins before serving. Enjoy!
