Cottage Cheese Crustless Quiche

Ingredients

  • 2 teaspoons extra-virgin olive oil
  • 1 medium yellow onion, finely chopped
  • 12 ounces fresh spinach, chopped
  • 10 ounces grated mozzarella cheese
  • 8 large egg whites (or 1 1/2 cups liquid egg whites)
  • 1 whole egg
  • 1/2 cup low-fat cottage cheese
  • 1/4 teaspoon ground cayenne pepper
  • 1/8 teaspoon sea salt
  • 1/8 teaspoon ground nutmeg
  • 1/4 teaspoon freshly ground black pepper

Preheat Oven and Prepare Pie Pan

Preheat the oven to 375°F and coat a 9-inch pie pan with cooking spray. Set aside.

Cook Onion and Spinach

Heat the olive oil in a skillet over medium-high heat. Add the chopped onion and cook until softened. Add the fresh spinach and cook until wilted and all moisture evaporates. Remove from heat and set aside.

Mix Egg Batter

In a large bowl, whisk together the whole egg, egg whites, cottage cheese, cayenne pepper, sea salt, nutmeg, and black pepper. Set the mixture aside.

Assemble the Quiche

Spread the grated cheese evenly on the bottom of the prepared pie pan. Layer the cooked spinach and onions on top of the cheese. Pour the egg batter over the veggies and cheese.

Bake and Rest

Bake the quiche in the preheated oven for 40 to 45 minutes, or until the eggs are fully set. Allow the quiche to rest for 5 minutes before slicing and serving. Enjoy!
