Ingredients

Ingredients (~3 servings)

  • 1 1/2 cups cottage cheese, any fat percentage works
  • 1/4 cup dark chocolate, melted
  • 1 1/2 Tbsp cocoa powder, start with 1 Tbsp and adjust
  • 1 1/2 tsp vanilla extract, optional
  • Pinch sea salt, optional
  • Whipped cream for serving
  • Fresh berries for serving
  • Chocolate shavings for serving

Instructions

  • Combine cottage cheese, melted dark chocolate, 1 Tbsp cocoa powder, vanilla extract, and sea salt in a food processor.
  • Blend for 3-5 minutes until completely smooth with no chunks remaining.
  • Taste and add more cocoa powder if desired, then blend again to incorporate.
  • Pour mousse into a bowl or jar and cover.
  • Chill in the fridge for at least 2 hours until thickened.
  • Divide into bowls and top with whipped cream, chocolate shavings, and fresh berries.

Notes

Mousse keeps covered in the fridge for up to 3 days.
