Cheese and Bacon Scones

Ingredients

  • 3 cups all-purpose flour, or white whole wheat flour
  • 1 tablespoon baking powder
  • 1 teaspoon salt
  • 1/2 teaspoon freshly ground black pepper
  • 1/4 teaspoon garlic powder
  • 1/8 teaspoon cayenne pepper
  • 10 tablespoons cold butter, diced into 1/4-inch cubes
  • 1 1/2 cups shredded sharp cheddar cheese
  • 3 tablespoons chopped fresh chives
  • 6 slices thick-cut bacon, cooked and diced
  • 1 cup + 2 tablespoons buttermilk

Optional Egg Wash

  • 1 large egg
  • 1 tablespoon water

Instructions

  • Preheat oven to 400°F. Line a baking sheet with parchment paper or grease it.
  • In a large bowl, whisk together flour, baking powder, salt, black pepper, garlic powder, and cayenne.
  • Add diced butter to the flour mixture and cut it in until the mix resembles coarse crumbs.
  • Stir in shredded cheese, chives, and diced bacon. Pour in buttermilk and knead until dough forms.
  • Transfer dough to a floured surface and roll out to 1/2-inch thickness. Fold in half horizontally and vertically; roll out again to 1/2-inch thickness.
  • Cut out biscuits using a biscuit cutter and place on prepared baking sheet.
  • (Optional) Whisk together egg and water, and brush the tops of the biscuits.
  • Bake for 18-20 minutes, until golden. Cool for 5 minutes before serving.
