Cheese Bacon Scones

Ingredients

  • 3 cups all-purpose flour (or white whole wheat flour)
  • 1 tablespoon baking powder
  • 1 teaspoon salt
  • 1/2 teaspoon freshly ground black pepper
  • 1/4 teaspoon garlic powder
  • 1/8 teaspoon cayenne pepper
  • 10 tablespoons cold butter, diced into 1/4-inch cubes
  • 1 1/2 cups shredded sharp cheddar cheese
  • 3 tablespoons chopped fresh chives
  • 6 slices thick-cut bacon, cooked and diced
  • 1 cup + 2 tablespoons buttermilk

Optional Egg Wash

  • 1 large egg
  • 1 tablespoon water

Preheat and Prep

Preheat the oven to 400°F. Line a baking sheet with parchment paper or grease it with cooking spray. Set it aside.

Mix Dry Ingredients

In a large mixing bowl, whisk together the flour, baking powder, salt, black pepper, garlic powder, and cayenne until well combined.

Cut in Butter

Add the diced butter to the flour mixture, using a fork or your hands, to cut the butter in until the mixture looks like coarse crumbs.

Add Mix-Ins and Buttermilk

Stir in the shredded cheese, chives, and bacon until evenly distributed. Pour in the buttermilk and knead the mixture with your hands until the dough is uniformly combined.

Roll and Fold the Dough

Transfer the dough to a floured surface. Use a rolling pin to roll it out to 1/2-inch thickness. Fold the dough in half horizontally and then vertically to create four layers. Roll it out again to 1/2-inch thickness.

Cut and Arrange Biscuits

Use a biscuit cutter to cut out the biscuits, re-rolling the dough as necessary. Place the cut biscuits on the prepared baking sheet.

Optional Egg Wash

In a small bowl, whisk together the egg and water. Brush the tops of the biscuits with this mixture for a golden finish.

Bake

Bake the biscuits in the preheated oven for 18–20 minutes, or until they are fully cooked and golden on top.
