Banana Oatmeal Pancakes

Ingredients

  • cups all-purpose flour
  • teaspoons baking powder
  • ¼ teaspoon table salt
  • 2 ripe bananas
  • cups milk
  • 1 cup old-fashioned rolled oats
  • 2 large eggs
  • 3 tablespoons vegetable oil
  • 2 tablespoons light brown sugar
  • 1 tablespoon honey
  • Vegetable oil spray

Instructions

  • Whisk together the flour, baking powder, and salt in a large bowl.
  • Mash the bananas in a medium bowl with a fork or potato masher.
  • Add milk and oats to the mashed bananas. Whisk and let sit for 5 minutes.
  • Whisk in the eggs, vegetable oil, light brown sugar, and honey to the banana mixture.
  • Combine the banana mixture with the dry ingredients. Whisk until just combined.
  • Spray a 12-inch nonstick skillet with vegetable oil spray and heat over medium for 1 minute.
  • Scoop ¼ cup portions of batter into the skillet. Cook each side until golden, 2 to 3 minutes per side.
  • Transfer pancakes to plates. Repeat with remaining batter. Serve warm.
