Banana Oatmeal Pancakes

Ingredients

  • 1¼ cups all-purpose flour
  • 2½ teaspoons baking powder
  • ¼ teaspoon table salt
  • 2 ripe bananas
  • 1½ cups milk
  • 1 cup old-fashioned rolled oats
  • 2 large eggs
  • 3 tablespoons vegetable oil
  • 2 tablespoons light brown sugar
  • 1 tablespoon honey
  • Vegetable oil spray

Mix the Dry Ingredients

In a large bowl, whisk together the flour, baking powder, and salt.

Mash the Bananas

Peel the bananas and place them in a medium bowl. Mash them well with a large fork or potato masher.

Add Milk and Oats

Add the milk and oats to the mashed bananas. Whisk to combine. Let the mixture sit for about 5 minutes so the oats can soften.

Mix in Wet Ingredients

Add the eggs, vegetable oil, light brown sugar, and honey to the banana mixture. Whisk until everything is well combined.

Combine with Dry Ingredients

Pour the banana mixture into the bowl with the flour mixture. Whisk until just combined, being careful not to overmix.

Preheat the Skillet

Spray a 12-inch nonstick skillet with vegetable oil spray. Heat over medium heat until hot, about 1 minute.

Cook the Pancakes

Use a ¼-cup measuring cup to scoop 3 portions of batter into the skillet, leaving space between each. Cook until the first side is golden, 2 to 3 minutes. Flip and cook the second side until golden, another 2 to 3 minutes.

Finish and Serve

Transfer the pancakes to plates. Repeat the process with the remaining batter in about 4 more batches. Turn off the heat and serve warm.
