Before You Begin
If you prefer a spicier salsa, reserve and add the jalapeño seeds.
Prepare the Salsa
Pulse the red onion, cilantro, and jalapeño in a food processor until finely chopped, about 5 pulses. Scrape down the sides as required.
Add the diced tomatoes, lime juice, garlic, salt, and pepper to the processor. Blend until smooth, roughly 20 to 30 seconds.
Adjust seasoning with more salt and lime juice, if desired.
