Stuff You Need (~9 biscuits)
- 3 cups AP flour, plus extra for dusting
- 1 1/2 Tbsp baking powder
- 3/4 tsp salt
- 3/4 cup (1 1/2 sticks) cold unsalted butter
- 1 cup + 2 Tbsp cold milk
Honey Butter
- 1/4 cup (4 Tbsp) salted butter
- 6 Tbsp honey
Get Your Oven to 400F and Prep Your Dry Ingredients
Preheat your oven to 400F.
In a large bowl, add the flour, baking powder, and salt; whisk together until combined.
Grate the Cold Butter Into the Flour Mixture
Using a large grater, grate the cold butter directly into the flour mixture.
You could also cut it into small cubes if you don’t have a grater – just make sure it stays cold.
Using your hands or a pastry cutter, work the butter into the flour until it becomes sandy and crumbly.
You’re looking for a texture that looks like coarse breadcrumbs with some pea-sized butter pieces.
Add the Milk and Form a Shaggy Dough
Pour in the cold milk and combine with a wooden spoon until it forms a shaggy dough.
Don’t overmix – it should look rough and barely hold together.
Roll Out and Fold the Dough
Dust a clean surface with flour and turn the dough out onto it.
Using your hands, lightly gather the dough and start to form it into a rough ball.
Flatten or roll the dough to about 1 inch thick, then fold it over on itself.
Repeat this folding process 3-4 times – this creates the flaky layers.
After your final fold, roll or pat the dough to 1/2 to 3/4 inch thickness.
Cut Out the Biscuits
Use a round cookie cutter or glass cup to cut straight down through the dough.
Don’t twist the cutter – this seals the edges and prevents the biscuits from rising properly.
Gather the scraps and gently re-roll to cut more biscuits.
You should get ~9 biscuits depending on your cutter size.
Bake for ~15-18 Minutes Until Golden Brown
Line a baking sheet with parchment paper and place the biscuits on it.
They can touch slightly – they’ll help support each other as they rise.
Bake on the middle rack for ~15-18 minutes or until the tops are golden brown.
Let them rest for 1-2 minutes before serving.
Make the Honey Butter While They Bake
Add the butter and honey to a small saucepan.
Melt over low heat, stirring constantly to prevent burning.
Once melted and combined, remove from heat and let it cool slightly.
Brush generously over the warm biscuits and serve.
