Ingredients
- 1 cup cottage cheese
- 2 ounces cream cheese
- 3 tablespoons powdered sugar
- Zest from one lemon
- 2 tablespoons lemon juice
- 1 teaspoon vanilla extract
Blend the filling
In a food processor or blender, combine the cottage cheese, cream cheese, powdered sugar, lemon zest, lemon juice, and vanilla.
Blend until very smooth, making sure to stop and scrape down the sides once or twice.
Taste and adjust
Give the mixture a quick taste test.
If needed, add additional powdered sugar for extra sweetness or more lemon zest and juice to enhance the lemon flavor.
Blend again until all adjustments are incorporated smoothly.
Chill and garnish
Transfer the mixture to a serving bowl and refrigerate for 15–20 minutes to firm up.
Before serving, sprinkle some additional lemon zest on top as a garnish.
