Crockpot Ranch Chicken Recipe

Ingredients

  • 6 medium Russet potatoes, cut into 2-inch pieces
  • 3 cups baby carrots
  • 4 boneless skinless chicken breasts
  • Salt and pepper, to taste
  • 1 large can (23 ounces) condensed cream of chicken soup
  • 1 packet (1 ounce) dry ranch dressing mix
  • 1/3 cup milk
  • Fresh chopped parsley (optional)

Layer the Ingredients

Spray a large crock pot (7-quart works well) with non-stick cooking spray.

Place the diced potatoes and baby carrots at the bottom of the crock pot.

Set the chicken breasts on top of the veggies, and season everything with salt and pepper.

Mix and Pour the Sauce

In a medium bowl, whisk together the condensed cream of chicken soup, dry ranch dressing mix, and milk until the mixture is smooth.

Pour this sauce evenly over the chicken and vegetables in the crock pot.

Slow Cook and Finish

Cover the crock pot with its lid and cook on high for 5 to 6 hours, or on low for 8 to 9 hours.

Avoid lifting the lid during cooking.

When the cooking time is complete, garnish each serving with fresh chopped parsley if you like.
