Cottage Cheese Raspberry Mousse

Ingredients

  • 1 cup low-fat cottage cheese
  • 3/4 cup fresh raspberries
  • 1/2 teaspoon vanilla extract
  • 1/4 cup vanilla whey protein powder
  • Optional garnish: fresh raspberries and whipped cream

Combine the base

In a blender or food processor, add 1 cup of cottage cheese, 3/4 cup of raspberries, 1/4 cup vanilla whey protein powder, and 1/2 teaspoon vanilla extract.

Blend until smooth

Process on high until the mixture is completely smooth and creamy, scraping down the sides as needed.

Portion and chill

Spoon the mousse evenly into two serving glasses. Refrigerate for 30 minutes to set and enhance the flavors.

Garnish & serve

Top with fresh raspberries, a light dusting of protein powder, or mint leaves, and serve chilled.
