Ingredients (~3 servings)
- 1 1/2 cups cottage cheese (any fat percentage works)
- 1/4 cup dark chocolate, melted
- 1 1/2 Tbsp cocoa powder (start with 1 Tbsp and adjust)
- 1 1/2 tsp vanilla extract (optional)
- Pinch of sea salt (optional)
- Whipped cream for serving
- Fresh berries for serving
- Chocolate shavings for serving
Blend Until Completely Smooth
In a food processor, combine cottage cheese, melted dark chocolate, 1 Tbsp of cocoa powder, vanilla extract, and sea salt.
Blend for ~3-5 minutes until completely smooth. I’d recommend blending for 1 minute longer even after you think it’s done – this makes all the difference for texture.
If you still see any chunks or small pieces, keep blending. The cottage cheese texture needs to completely disappear.
Taste and Adjust Cocoa
Once blended, taste the mousse and add more cocoa powder if you want a deeper chocolate flavor.
Blend again to incorporate. The mixture will taste like chocolate pudding at this point but will thicken considerably in the fridge.
Chill for at Least 2 Hours
Pour mousse into a bowl or jar and cover.
Chill in the fridge for at least 2 hours – this step transforms it from pudding consistency to actual mousse texture.
The mousse will thicken and become much creamier as it chills.
Serve with Toppings
Divide into bowls and top with whipped cream, chocolate shavings, and fresh berries.
The mousse keeps well in the fridge for up to 3 days covered.
