Southern Green Beans and Potatoes with Bacon
This is all stuff I typically have on hand and it's a great way to use up fresh green beans from the garden. The longest part is just waiting for everything to get tender.

Ingredients
Ingredients (~6 servings)

slices smoked bacon

Tbsp
bacon fat

rendered from bacon

yellow onion

chopped

garlic cloves

fresh green beans

cut into 1 1/2 inch lengths

low-sodium chicken broth
▢
~1 1/4 lbs small to medium red potatoes
▢
3/4
tsp
salt

black pepper

Pinch
red pepper flakes
Instructions
Cook bacon in Dutch oven until crisp; transfer to paper towel and chop.
Reserve 1 Tbsp bacon fat in pot.
Sauté onions in fat until soft.
Add garlic and cook 1 minute.
Stir in green beans, chicken stock, and black pepper.
Cover and simmer 30 minutes.
Cut potatoes into uniform pieces.
Add potatoes to pot, adding water if needed to cover.
Sprinkle with salt and red pepper flakes.
Simmer 20 minutes until potatoes are tender.
Transfer to serving bowl.
Stir in half the bacon.
Garnish with remaining bacon and pepper.
Notes
Use small to medium red potatoes for best results.
