Sour Cream and Onion Mashed Potatoes

I grew up on regular mashed potatoes but these taste like your favorite potato chip in the best way possible. The dried onion infuses into the cream while the potatoes cook - so you get onion flavor without any crunch.

Ingredients

Ingredients (~12 servings)

  • ~4 1/2 lbs Yukon gold potatoes
  • 2 garlic cloves, grated
  • 1 cup heavy cream
  • 6 Tbsp salted butter
  • 12 oz sour cream, room temperature
  • 1 1/2 Tbsp dried minced onion
  • 3/4 cup thinly sliced green onions, dark green parts
  • 1/3 cup minced fresh chives
  • Kosher salt & freshly cracked pepper

Instructions

  • Peel and chop potatoes into even chunks.
  • Cover potatoes with salted water and boil for 20-25 minutes until tender.
  • Warm cream, butter, garlic, and dried onion in saucepan over low heat for 10 minutes.
  • Drain potatoes and return to pot.
  • Mash potatoes, gradually adding cream mixture.
  • Stir in sour cream until desired consistency.
  • Mix in green onions and chives.
  • Season with salt and pepper.
  • Serve immediately.

Notes

Best served hot; does not hold well when cooling.
