Irish Mashed Potatoes (Colcannon)
This recipe uses up leftover kale and turns regular mashed potatoes into something that feels like a complete meal.

Instructions
Peel and cut potatoes into eighths, boil in salted water until fork tender, about 15 minutes.
Drain potatoes and whip in stand mixer until smooth.
Melt butter in skillet, cook kale for 5 minutes, then add green onions and cook 2 minutes.
Pour cream into skillet and heat until steaming.
Add cream mixture to potatoes and season with salt, white pepper, and garlic powder.
Stir until combined and transfer to serving bowl.
Serve warm with a pat of melted butter in the center.
Notes
Make a well in potatoes and let butter melt for traditional Irish serving style.
