Irish Mashed Potatoes (Colcannon)

This recipe uses up leftover kale and turns regular mashed potatoes into something that feels like a complete meal.

Ingredients

  • 6 medium russet potatoes, peeled
  • 3 Tbsp unsalted butter
  • 3/4 cup green onions, sliced in 1/4 inch pieces
  • 4 cups kale, cut in small pieces
  • 3/4 cup heavy whipping cream
  • 2 tsp salt, or to taste
  • 1/8 tsp garlic powder
  • 1/8 tsp white pepper

Instructions

  • Peel and cut potatoes into eighths, boil in salted water until fork tender, about 15 minutes.
  • Drain potatoes and whip in stand mixer until smooth.
  • Melt butter in skillet, cook kale for 5 minutes, then add green onions and cook 2 minutes.
  • Pour cream into skillet and heat until steaming.
  • Add cream mixture to potatoes and season with salt, white pepper, and garlic powder.
  • Stir until combined and transfer to serving bowl.
  • Serve warm with a pat of melted butter in the center.

Notes

Make a well in potatoes and let butter melt for traditional Irish serving style.
