Horseradish Mashed Potatoes
This is my go-to when regular mashed potatoes feel boring - the horseradish gives them a kick without being overwhelming. They're rich, creamy, and way more interesting than what most people bring to dinner.

~4 lbs Yukon gold potatoes

Instructions
Cut potatoes into 2-inch chunks and place in large pot with salted water.
Boil potatoes for 20-25 minutes until fork tender.
Warm butter, cream, and grated garlic in saucepan for 2-3 minutes.
Drain potatoes and return to hot pot.
Mash potatoes and mix in warm cream mixture.
Add sour cream, horseradish, and dijon mustard.
Continue mashing until desired consistency.
Fold in chives and season with salt and pepper.
Serve hot.
Notes
Start with 1 tsp salt and adjust to taste. Potatoes need more seasoning than expected.
