Ingredients

  • 1.5 pounds boneless, skinless chicken breasts or thighs, cut into 1-inch pieces
  • 1 teaspoon kosher salt
  • 1/2 teaspoon freshly ground black pepper
  • 1/4 cup honey
  • 2 tablespoons soy sauce or tamari
  • 2 tablespoons apple cider vinegar
  • 3 tablespoons olive oil, divided
  • 4 cloves garlic, minced
  • Thinly sliced scallions, for garnish (optional)

Instructions

  • Pat chicken dry.
  • Season with salt and pepper.
  • Whisk honey, soy sauce, and vinegar.
  • Heat 1.5 tbsp olive oil in skillet over medium heat.
  • Cook half the chicken for 4 minutes, flip, and cook 2 minutes.
  • Set aside.
  • Repeat with remaining oil and chicken.
  • Return all chicken and juices to skillet.
  • Add garlic, cook 30 seconds.
  • Increase heat to medium-high.
  • Pour in glaze, cook 3-4 minutes, spooning sauce over chicken.
  • Remove from heat.
  • Garnish with scallions if desired.
  • Serve immediately.
