Crumbl Birthday Cake Cookies

These are thick, cake-like cookies with serious cake batter flavor and a cream cheese frosting that's basically buttercream. They're meant to be eaten warm when the frosting gets slightly melty.

Ingredients

Cake Batter Cookie Base

  • 1/3 cup salted butter, softened
  • 1/3 cup granulated sugar
  • 1 egg
  • 1/2 tsp cake batter flavoring
  • 1 cup all-purpose flour
  • 3/4 tsp baking powder
  • 1 Tbsp sprinkles, optional

Cake Batter Cream Cheese Frosting

  • 2 oz cream cheese, room temperature
  • 1 Tbsp salted butter, softened
  • 1/4 tsp cake batter flavoring
  • 1 cup powdered sugar
  • milk, to thin if needed

Instructions

  • Preheat oven to 350F.
  • Cream together 1/3 cup softened butter and 1/3 cup granulated sugar for 3-4 minutes until light and fluffy.
  • Add 1 egg and 1/2 tsp cake batter flavoring, beat until mixed.
  • Add 1 cup flour and 3/4 tsp baking powder, mix until combined.
  • Fold in 1 Tbsp sprinkles if using.
  • Scoop dough into 6 balls and flatten each into a hockey puck shape.
  • Arrange on a baking sheet with space between cookies.
  • Bake 12-15 minutes until centers puff and are no longer glossy.
  • While cookies cool, whip 2 oz cream cheese and 1 Tbsp softened butter until smooth.
  • Gradually add 1 cup powdered sugar and mix until incorporated.
  • Add 1/4 tsp cake batter flavoring.
  • Thin with milk 1 tsp at a time if needed.
  • Transfer frosting to a zip-top bag, cut corner, and pipe onto warm cookies in a spiral.
  • Top with additional sprinkles if desired.
  • Serve warm.

Notes

Cookies will look slightly underdone when removed from oven but continue cooking as they cool.
