Ingredients

  • 2 ripe bananas, mashed
  • 3 eggs
  • 1/2 cup cottage cheese
  • 4 tablespoons maple syrup, adjust to taste
  • 2 teaspoons vanilla extract
  • 2 1/4 cups almond flour
  • 3/4 teaspoon baking soda
  • 2 teaspoons cinnamon
  • Optional mix-ins: chopped pecans, chocolate chips, or dried cranberries

Instructions

  • Preheat oven to 350°F. Line a loaf pan with parchment paper and grease it.
  • Mash bananas in a large bowl. Add eggs, Greek yogurt, maple syrup, and vanilla extract. Stir until smooth.
  • Fold in almond flour, baking soda, and cinnamon. Mix until just incorporated.
  • Optional: Stir in mix-ins like pecans, chocolate chips, or dried cranberries.
  • Pour batter into prepared loaf pan. Smooth the top.
  • Bake 45–55 minutes until a toothpick comes out clean. Tent with foil if top browns too quickly.
  • Cool in pan for 10 minutes, then transfer to wire rack to cool completely. Slice and enjoy.
