Confetti Cookies

This is a really basic cookie recipe using boxed cake mix - it's perfect when you want something colorful without making frosting. The sprinkles bake right into the dough so they won't fall off.

Ingredients

Ingredients (~35 cookies)

  • 1 box confetti cake mix, 15.5 ounce
  • 1 1/2 tsp baking powder
  • 3 eggs
  • 3/4 cup butter, 1 1/2 sticks, softened
  • 1 1/2 tsp vanilla extract
  • 3/4 cup rainbow sprinkles

Instructions

  • Preheat oven to 350F and line three baking sheets with parchment paper.
  • Whisk cake mix and baking powder in a large bowl.
  • Add butter, eggs, and vanilla. Beat with electric mixer until combined.
  • Gently fold in rainbow sprinkles.
  • Scoop dough using 1 1/2 tablespoon cookie scoop onto prepared sheets, 2 inches apart.
  • Bake 12 minutes until edges are golden.
  • Cool completely on baking sheets before removing.

Notes

Cookies will be soft when hot but firm up while cooling.
