Caprese Bruschetta
This is a simple Italian appetizer that's perfect for parties - you can prep the tomato mixture hours ahead and just assemble when guests arrive. The balsamic reduction really makes it special but takes a few extra minutes.

Instructions
Reduce balsamic vinegar in small saucepan over medium heat until halved and syrupy, about 10-12 minutes.
Seed and dice Roma tomatoes. Mix with minced garlic, salt, pepper, and white balsamic vinegar.
Julienne basil and fold into tomato mixture.
Slice baguette diagonally and brush with olive oil.
Broil bread slices until golden, then rub with garlic cloves.
Preheat oven to 400F. Top bread with mozzarella slice and bake 4-5 minutes until cheese melts.
Top bread with tomato mixture and drizzle with balsamic reduction.
Serve immediately.
Notes
Watch bread closely under broiler to prevent burning. Use fresh ingredients for best flavor.
