Brownie Mix Cookies

This is a really basic cookie recipe that uses boxed brownie mix as the base. They're fudgy like brownies but have that crispy cookie bottom - plus you can make them in under 30 minutes.

Ingredients

Ingredients (~36 cookies)

  • 1 1/2 boxes brownie mix
  • 3/4 cup all-purpose flour
  • 3 large eggs
  • 1/2 cup butter, melted
  • 1 1/2 tablespoons water
  • 1 cup chocolate chips

Instructions

  • Preheat oven to 350F and line two baking sheets with parchment paper.
  • Mix brownie mix, flour, eggs, melted butter, and water in mixer until smooth.
  • Fold in chocolate chips gently.
  • Drop 2 tablespoons of dough per cookie onto sheets, 2 inches apart.
  • Bake 9-11 minutes until edges are cracked but centers look slightly underdone.
  • Let cookies rest on baking sheet 3-5 minutes before transferring to wire rack.

Notes

Cookies will firm up as they cool. Makes approximately 36 cookies.
