Gather the Ingredients

  • 1.5 pounds beef stew meat
  • 2 teaspoons salt
  • 1/2 teaspoon ground black pepper
  • 1/2 teaspoon garlic powder
  • 2 tablespoons vegetable oil
  • 1.5 pounds baby red potatoes
  • 1 tablespoon vegetable oil
  • 1 teaspoon salt
  • 1/2 teaspoon ground black pepper
  • 1/2 teaspoon garlic powder
  • 1 large onion, roughly chopped
  • 1/2 cup butter, cubed

Season the Beef

In a bowl, season 1.5 pounds beef stew meat with 2 teaspoons salt, 1/2 teaspoon ground black pepper, and 1/2 teaspoon garlic powder.

Sear the Meat

Heat 2 tablespoons vegetable oil in a skillet over medium-high heat. Add the beef in batches (don’t crowd the pan) and sauté until browned on all sides. Transfer to the slow cooker.

Season the Potatoes

In a large bowl, toss 1.5 pounds diced baby red potatoes with 1 tablespoon vegetable oil, 1 teaspoon salt, 1/2 teaspoon ground black pepper, and 1/2 teaspoon garlic powder.

Load the Slow Cooker

Scatter the roughly chopped onion across the bottom of the slow cooker. Push the seared beef to one side and pile the seasoned potatoes on the other. Dot with 1/2 cup cubed butter.

Cook Low and Slow

Cover the slow cooker and cook on LOW for 6-8 hours, until the beef is tender and the potatoes are cooked through.
