Ingredients

  • 1 pound boneless, skinless chicken thighs
  • 1 cup heavy cream
  • 1 cup chicken broth
  • 4 ounces cream cheese, cubed
  • 2 tablespoons unsalted butter, cubed
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • ½ teaspoon Italian seasoning
  • 8 ounces uncooked ziti pasta
  • ½ cup Parmesan cheese, plus more for serving
  • Fresh chopped parsley, for serving
  • Salt and pepper, to taste

Prep the slow cooker

Start by adding the chicken thighs, heavy cream, chicken broth, cream cheese, butter, garlic powder, and paprika to the slow cooker. Season lightly with salt and pepper.

Cook the chicken

Cover the slow cooker and cook on HIGH for about 2 hours until the chicken is fully cooked and tender.

Shred and combine

Remove the chicken from the slow cooker and shred it using two forks. Return the shredded chicken to the slow cooker and stir in the uncooked ziti pasta and Parmesan cheese.

Finish cooking

Continue cooking on HIGH for another 30 minutes or until the pasta is tender and the sauce has thickened.

Serve

Adjust the seasoning with additional salt and pepper if needed. Serve the dish immediately, garnished with fresh chopped parsley and extra Parmesan cheese if you desire.
