- 3 pounds top sirloin steak, cubed

Sear the Beef
Begin by searing the cubed beef in batches using a heavy skillet, ideally cast iron.
While browning, sprinkle the steak with seasoned salt and pepper. Once the beef is seared, transfer it to your slow cooker.
Layer in Flavor
Pour the beef broth and soy sauce over the seared beef. Add the Italian seasoning and dried thyme.
Next, scatter the diced onion and sprinkle with granulated garlic. Tuck a bay leaf into the mixture for added flavor.
Slow Cook Until Tender
Cover the slow cooker and cook on the LOW setting for 6 hours or on HIGH for 4 hours until the beef is tender when pierced with a fork.
Be cautious with cooking times, as overcooking may cause the beef to disintegrate rather than hold its cubes.
Finish the Gravy
Create a slurry by combining 1 tablespoon of cornstarch with 3 tablespoons of water.
Carefully stir this mixture into the slow cooker. Allow it to cook for an additional 5 to 10 minutes until the gravy thickens.
Remove the bay leaf before serving.
