Ingredients (~8 servings)
- 2 yellow onions, thinly sliced (1/8″ thick)
- 2 Tbsp olive oil
- 6 oz cream cheese, softened
- 3/4 cup sour cream
- 3 Tbsp mayonnaise
- 1 tsp Worcestershire sauce
- 1/4 tsp salt
- 2 Tbsp fresh parsley, chopped
- Potato chips for serving
Caramelize the Onions
Slice the onions in half lengthwise, then slice to 1/8″ thickness. A mandolin makes this way faster but a sharp knife works fine.
Heat the olive oil in a 12-inch skillet over medium-low heat. Add the onions and stir occasionally.
Keep the heat at medium-low; if you crank it up, the onions will burn instead of caramelizing.
This takes ~40-45 minutes. You’re looking for the onions to turn a rich brown color and become soft but not mushy.
Once they’re done, remove from heat and set aside to cool slightly.
Mix the Cream Cheese Base
In a large bowl, combine the cream cheese, sour cream, mayo, salt, and Worcestershire sauce.
Use hand beaters to cream the mixture until smooth – the cream cheese should be completely incorporated with no lumps.
Combine Everything
On a cutting board, roughly chop the caramelized onions into bite-sized pieces so they’re not in long strands.
Stir the chopped onions and fresh parsley into the cream cheese mixture until well combined.
Serve with potato chips or whatever you like for dipping.
The dip keeps in the fridge for ~3-4 days and actually tastes better the next day once the flavors have had time to meld.
