Cottage Cheese Pizza Bowl

Ingredients

  • 1 cup low-fat cottage cheese
  • 1/2 cup marinara sauce
  • 1 teaspoon Italian seasoning
  • 1/8 teaspoon crushed red pepper flakes (optional)
  • 1/2 cup part-skim mozzarella cheese, shredded
  • 1/3 cup turkey pepperoni, diced
  • 1 tablespoon fresh basil, chopped (optional)

Layer the Base

In a microwave-safe bowl or ramekin, add 1 cup of cottage cheese. Top with 1/2 cup of marinara sauce, 1 teaspoon of Italian seasoning, and 1/8 teaspoon of crushed red pepper.

First Microwave

Microwave on high for 30 seconds. Remove and stir the mixture, then mix in the diced turkey pepperoni and 1/2 cup shredded mozzarella.

Second Microwave

Return to the microwave and cook for an additional 30 seconds to 1 minute, until hot and the mozzarella is melted and bubbly.

Garnish & Serve
