Ingredients
- 1 cup low-fat cottage cheese
- 1/4 cup marinara sauce
- 1/2 teaspoon Italian seasoning
- 1/8 teaspoon crushed red pepper flakes (optional)
- 1/2 cup part-skim mozzarella cheese, shredded
- 1/3 cup turkey pepperoni, diced
- 1 tablespoon fresh basil, chopped (optional)
Drain the Cottage Cheese
Place 1 cup of cottage cheese in a fine mesh strainer over a bowl and let it drain for about 10 minutes. This removes excess whey and prevents the bowl from turning out runny.
Layer the Base
In a wide, shallow microwave-safe bowl or ramekin, add the drained cottage cheese. Top with 1/4 cup of marinara sauce, 1/2 teaspoon of Italian seasoning, and 1/8 teaspoon of crushed red pepper.
First Microwave
Microwave on high for 30 seconds. Remove and stir the mixture, then mix in the diced turkey pepperoni.
Second Microwave
Top with 1/2 cup shredded mozzarella. Return to the microwave and cook for an additional 60 to 90 seconds, until hot and the mozzarella is melted and bubbly.
Rest, Garnish & Serve
Let the bowl sit for 1–2 minutes so the cheese firms up and everything thickens. Top with fresh basil leaves. Serve warm with mini bell pepper halves or crostini made from keto bread or baguette.
