Ingredients

  • 1.5 pounds beef stew meat
  • 2 teaspoons salt
  • 1/2 teaspoon ground black pepper
  • 1/2 teaspoon garlic powder
  • 2 tablespoons vegetable oil
  • 1.5 pounds baby red potatoes
  • 1 tablespoon vegetable oil
  • 1 teaspoon salt
  • 1/2 teaspoon ground black pepper
  • 1/2 teaspoon garlic powder
  • 1 large onion, roughly chopped
  • 1/2 cup butter, cubed

Instructions

  • Season 1.5 pounds beef stew meat with 2 teaspoons salt, 1/2 teaspoon ground black pepper, and 1/2 teaspoon garlic powder.
  • Heat 2 tablespoons vegetable oil in a skillet over medium-high heat. Sauté beef in batches until browned on all sides. Transfer to slow cooker.
  • Toss 1.5 pounds diced baby red potatoes with 1 tablespoon vegetable oil, 1 teaspoon salt, 1/2 teaspoon ground black pepper, and 1/2 teaspoon garlic powder.
  • Scatter roughly chopped onion on the bottom of the slow cooker. Add seared beef and seasoned potatoes. Dot with 1/2 cup cubed butter.
  • Cover and cook on LOW for 6-8 hours until beef is tender and potatoes are cooked through.
