Copycat Chipotle White Queso Dip

This is way better than the stuff at Chipotle and takes ~15 minutes to make. I always have most of this stuff on hand so it's become my go-to when people come over.

Ingredients

Ingredients (~6 servings)

  • 1 Tbsp neutral oil
  • 1/2 yellow onion, finely diced
  • 2 jalapeños, minced
  • 4 oz cream cheese, diced
  • 1 can evaporated milk, 12 oz
  • 1/4 tsp ground cumin
  • 1/2 tsp chili powder
  • 1 can Rotel tomatoes & chilies, 10 oz
  • 8 oz monterey jack cheese, grated
  • 1/4 cup chopped cilantro
  • 1 lime, juiced
  • Salt & pepper

Instructions

  • Heat oil in skillet over medium heat.
  • Sauté onion and jalapeño for 2-3 minutes until softened.
  • Add cream cheese and stir until melted.
  • Mix in Rotel, cumin, and chili powder.
  • Pour in evaporated milk and simmer 5-7 minutes until thickened.
  • Stir in monterey jack cheese until smooth.
  • Remove from heat and add cilantro and lime juice.
  • Season with salt and pepper to taste.
  • Serve immediately with tortilla chips.

Notes

Reheats well in microwave. Sauce thickens as it cools.
