Ingredients
- 2 cups finely chopped Vidalia onions
- 1 1/2 cups shredded sharp cheddar cheese (6 ounces)
- 3/4 cup mayonnaise
- 1/2 cup chopped American cheese (2 ounces)
- 1/4 cup thinly sliced scallion greens
Before You Begin
Other sweet onions such as Maui or Walla Walla are also suitable for this recipe. Avoid using regular yellow onions. This dip pairs well with crackers or tortilla chips.
Prepare the Onion Dip
Adjust your oven rack to the middle position and preheat the oven to 375°F. In a mixing bowl, combine the chopped onions, shredded cheddar cheese, mayonnaise, American cheese, and 2 tablespoons of the scallion greens. Transfer the mixture to a 1-quart casserole dish.
Bake and Serve
Bake the dip until it is browned and bubbly, approximately 25 minutes. Allow it to cool for 10 minutes, then garnish with the remaining 2 tablespoons of scallion greens. Serve and enjoy.
