Simple Four-Ingredient Coleslaw

This is the coleslaw recipe I make when I need a quick side that actually tastes like something. Four ingredients, takes about 5 minutes, and it’s way better than the watery stuff you get at most places.

Ingredients (~6-8 servings)

  • 2 (14 oz) packages coleslaw mix
  • 3/4 cup good quality mayonnaise
  • 2 Tbsp honey
  • 2 Tbsp apple cider vinegar
  • Salt to taste

Make the Dressing

In a small mixing bowl, whisk together the mayonnaise, honey, and apple cider vinegar until smooth.

The honey might clump up at first but just keep whisking – it’ll come together.

Taste and add a pinch or two of salt if needed; Some coleslaw mixes are already salted so start light.

Toss Everything Together

Place both packages of coleslaw mix in a large mixing bowl.

Pour the dressing over the top and toss until everything is evenly coated.

You want every strand covered but not swimming in dressing.

Serve immediately or let it sit for ~10 minutes if you want the flavors to meld a bit.

The coleslaw will keep in the fridge for 2-3 days but it’s best the first day before it starts getting watery.

  • 2 Tbsp apple cider vinegar
  • Salt to taste

Instructions

  • Whisk mayonnaise, honey, and apple cider vinegar in a small bowl until smooth.
  • Add salt to taste, starting with a small pinch.
  • Place coleslaw mix in a large bowl.
  • Pour dressing over mix and toss until evenly coated.
  • Serve immediately or let sit 10 minutes for flavors to develop.

Notes

Best consumed within 1-2 days. Refrigerate between servings.
