Ingredients
- 1 cup 4% milkfat cottage cheese
- 1/4 cup honey
- 1 tsp vanilla extract
- 1 cup almond flour
- 2 tbsp melted coconut oil
- 1/2 cup vanilla protein powder
- 1/2 cup dark chocolate chips
Heat the oven
Preheat your oven to 350 °F and line a baking sheet with parchment paper.
Blend the wet ingredients
In a blender, combine the cottage cheese, honey, and vanilla extract. Blend on high until completely smooth.
Mix the dough
In a large bowl, stir together the almond flour and protein powder. Add the blended cottage cheese mixture and melted coconut oil, mixing until a uniform dough forms.
Fold in chocolate chips
Gently fold the dark chocolate chips into the dough until evenly distributed.
Portion and shape
Use a medium cookie scoop to drop portions onto the prepared baking sheet. Flatten each slightly with your hand or roll into balls and press down for a uniform shape. Press a few extra chocolate chips into the tops of the dough.
Bake and cool
Bake for 15–16 minutes, or until the bottoms are golden brown. Allow the cookies to rest on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
