Dirty Rice

This is a one pot meal from Louisiana that combines ground pork sausage, ground beef, rice and Cajun seasonings. The bacon grease is used to sauté the vegetables which adds another layer of flavor to the dish.

Ingredients (~6 servings)

  • 3/4 lb ground pork sausage (like breakfast sausage)
  • 3/4 lb ground beef (or venison)
  • 2 slices bacon, chopped
  • 1 large yellow onion, diced (~1 1/2 cups)
  • 2 ribs celery, diced
  • 1 green bell pepper, deseeded and diced
  • 3 cloves garlic, minced
  • 4 1/2 cups low sodium chicken broth
  • 2 tsp Cajun seasoning
  • 3/4 tsp garlic powder
  • 3/4 tsp onion powder
  • 1 cup long grain rice, uncooked
  • 3 Tbsp green onions, chopped

Brown the Ground Meat and Sausage

Add the 3/4 lb ground beef and 3/4 lb ground pork sausage to a large heavy bottomed pot.

Heat over medium-high and cook until no pink remains, breaking up the meat as it cooks.

Once browned, remove the meat to a bowl and discard the rendered fat from the pot.

Cook the Bacon and Reserve the Grease

Add the 2 slices chopped bacon to the same pot.

Cook over medium heat until the bacon is done and crispy.

Remove the bacon but keep all the grease in the pot – this is what you’ll use to cook the vegetables.

Sauté the Vegetables in Bacon Grease

Add the diced onion, 2 ribs celery, and diced bell pepper to the bacon grease.

Cook over medium heat until soft, ~8-10 minutes.

Add the 3 cloves minced garlic and cook for 2 more minutes.

The garlic burns easily so don’t add it too early.

Add the Broth and Seasonings

Pour in the 4 1/2 cups chicken broth.

Add the 2 tsp Cajun seasoning, 3/4 tsp garlic powder, and 3/4 tsp onion powder.

Stir to combine, then cover the pot and bring to a slow boil over medium-low heat.

Allow to simmer for 20 minutes.

Add the Meat and Rice Back to the Pot

After 20 minutes, add the browned meat, cooked bacon, and 1 cup uncooked rice to the pot.

Stir everything together, then cover again.

Simmer over low heat for 15 minutes without removing the lid.

The rice will absorb the broth and cook through during this time.

Finish and Serve

Remove the lid and stir the rice.

The rice should be tender and most of the liquid absorbed.

Sprinkle the 3 Tbsp chopped green onions over the top and serve.

Savory Dirty Rice

Instructions

  • Brown ground beef and sausage in a large pot over medium-high heat, breaking up meat as it cooks, then remove to a bowl.
  • Add chopped bacon to the same pot and cook over medium heat until crispy, then remove but keep the grease.
  • Add diced onion, celery, and bell pepper to the bacon grease and cook over medium heat for 8-10 minutes until soft.
  • Add minced garlic and cook for 2 more minutes.
  • Pour in chicken broth and add Cajun seasoning, garlic powder, and onion powder.
  • Stir to combine, cover, and bring to a slow boil over medium-low heat, then simmer for 20 minutes.
  • Add the browned meat, cooked bacon, and uncooked rice to the pot and stir.
  • Cover and simmer over low heat for 15 minutes without lifting the lid.
  • Remove lid and stir the rice until tender and liquid is absorbed.
  • Sprinkle chopped green onions over the top and serve.

Notes

Do not add garlic too early as it burns easily.
